This is another really fast, super healthy and delicious dish. It goes perfect with just about anything, chicken, pork, beef or salmon. The flavors complement each other perfectly and you get a big dose of vitamins and antioxidants.
I buy the big bags of baby kale, spinach and chard at Costco, they usually go bad before I can finish them so I started making this side dish a lot. We haven’t gotten bored of it, sometimes I will add tuna to it and make it my lunch. It’s really filling.
You can chop the veggies ahead of time and just sauté everything 15 minutes before your about to eat. I sometimes will chop everything during nap time and then cook it at dinner time.

- 4 handfuls of baby kale and spinach
- 1 onion
- 1 serrano
- 6 white mushrooms
- 3 garlic cloves
- avocado oil
- black pepper
- pink Himalayan salt
- Chop all your veggies
- In large skillet heat the avocado oil, add the onion and sauté until soft. Season lightly.
- Once soft add the garlic and serrano and sauté for 1 minute, then add the mushrooms and sauté for 5 minutes.
- Add the kale and spinach and sauté until cooked. Season to taste
You can substitute the serrano for a jalapeno for a less spicy chile.
