I love this side dish because it is really tasty and fast to make. I’m roasting a chicken and serving the roasted veggies as a side. If I have time I might make sauté greens, I had no veggies with my lunch and I feel like I need more vitamins. I stopped taking my prenatal and because I breastfeed I need a lot more vitamins.
I love making dishes that I can do all the prep work before hand. It allows me to be more relaxed when Matt comes home instead of juggling dinner, baby and the dog.
I put a whole chicken in a Pyrex and seasoned it with black pepper, lemon zest, dill, salt and cayenne pepper then just threw it in the oven at 350F for 2 hours. I chopped the Brussel sprouts in half, the bell pepper in chunks as well as the cauliflower and mixed it with avocado oil and my seasonings and that’s about it. I mix everything in the same baking dish so I don’t have to wash any more dishes. In about an hour and a half I will put it in the oven with the chicken and I have an amazing dinner.
The beauty of prepping my meals before hand is that I can do it when Sebastian is entertained by himself. I can cook peacefully without him constantly asking for my attention and then when he is bored of playing alone I can focus on him because dinner is pretty much done. We are both happy this way and it makes me a better mom. It has taken me a while to change my routines but I’m getting the hang of it. I think that’s why they say the second child is easier, you all ready know the tricks.

- 1 lb Brussel sprouts
- 7 mini bell peppers
- 1 head of green cauliflower
- black pepper
- pink Himalayan salt
- avocado oil
- Chop the Brussel sprouts ends and then chop them in half. I chop the larger bell peppers in 3 and the smaller ones in half and the cauliflower in small florets.
- Place all the veggies in a baking dish, pour the avocado oil on top and sprinkle seasonings to taste
- Bake at 350F for 35 to 45 minutes depending on how cooked you like them. I bake them for 45 min.
