I’ve said a few times how much I love chocolate cake. When I was pregnant with Sebastian I ate one every day. I know, I know, it was really bad in my part but with all of the things happening with his health I gave myself a pass. I read all the articles stating that what mom eats baby will want. I fail in that aspect but I’m making it up to him now. He loves spinach and kale though he also loves bananas.
After I gave birth I went on Whole30s and eating 95% paleo. I lost all the baby weight and then as Sebastian’s surgery approached I went back to my bad cake habits. I’ve blame it on breastfeeding craving, stress, anxiety but really I just really love cake. I need to do another Whole30 to kill my sugar dragon but for know I’ve made paleo chocolate cake! The best inventions come from need and I have finally made the best chocolate cake ever! It is way better then my beloved chocolate cake from QFC and it’s healthy. Healthyish. It’s Paleo.
I have a few different version, blueberry, carrot, lemon but this one is my all time favorite. It takes about 7 minutes to make and I always have the ingredients on hand and I’m sure you do too.
I going to go eat my cake and do more crafts for Sebastian’s first birthday party. Its pirate themed and I’ve being doing some pretty awesome things,

- 1 banana
- 1 egg
- 14 cup coconut flour
- 1 tablespoon almond butter
- 1 tablespoon chocolate chips
- pinch of pink Himalayan sea salt
- Pure the banana in a large mug. Add the salt and egg and beat well.
- In another mug melt the chocolate and almond butter, then incorporate to the egg mixture. Mix well.
- Microwave for 4 12 minutes.
