Okay I didn’t have time to take a picture of this one because I inhaled them right from the stove. I am a breastfeeding mom so its aloud. JK but I did eat a lot of them from the stove, I had to save some for my mom and hubby.
My mom went back to Mexico today, she came up to help me with the house and Sebastian. With the surgery I was pretty overwhelmed and really needed the help. Everything went great and we are all back home. Now its time for me to work, work, work on the blog. I have a million recipes to share with you guys. I am still pretty busy with S. It will take some time for him to be 100% but if you would see him now you would never imagine he just had a massive surgery. he is a trooper. a true warrior.
My mom was pretty awesome and helped me cook Paleo meals, which is pretty impressive because she was not particularly pro the paleo lifestyle. She did say that in the week and a half she visited she felt much better.
This recipe is a collaboration between my mom and the hubs. I told them to make sweet potatoes and they did the rest.
- 1 onion diced
- 2 sweet potatoes diced
- 4 slices of hearty organic bacon diced
- Garlic Salt and pepper to taste
- Paprika about a teaspoon
- 1 teaspoon dill weed
- Cook the bacon in a hot pan until crispy, remove and add the onion and sauté until translucent. Add the sweet potatoes and sauté with the seasonings. Add the bacon, over and cook until the sweet potatoes are fully cooked. Done!
- It is a super easy recipe but its packed with flavor. The sweetness of the sweet potatoes really complement the bacon and bring out the sweetness in it. We added the bacon and cooked it with the sweet potatoes to make it soft. If you want a crispy bacon add it at the end but I really like the soft bacon in this dish. It goes great because the potatoes are so soft.
